Who Is This Pizza Oven For?

In my opinion, this one is for the oven connoisseur. The model is thermodynamically designed to create optimal combustion. This wood-powered oven is composed of quality materials, such as stainless steel, heat-retentive bricks, and wool rock insulation. Everything in this model has been designed to deliver a well-crafted and delicious pizza.

Specifications

The Pulcinella’s specs are somewhat more versatile than that of Clementi’s Pizza Party model. The weight is around 130 kg, which is slightly heavier than some other designs. Yet, fitted with two wheels, the Pulcinella’s stand can easily be manoeuvred around your outdoor area.

Clementi made sure to fit their high-quality oven with a sleek design. Its stainless steel composition can be customized with four different colour options. These include red, anthracite, copper, or stainless steel. This ensures that the Pulcinella will fit your space, regardless of colour scheme.

All Clementi models are wood fired and fitted with a damper system. The thermometer provides accurate internal readings, which gives you up to date knowledge of the temperature. Regardless of hearth size, it takes about 15-20 minutes for the oven to rise to 400 C.

The Pulcinella does come with three separate hearth sizes. These include:

  • 60 x 60 CM

This is the smallest size they offer. In my experience, this is optimal for cooking two pizzas at a time. It will take about 4 kg of wood to get the internal temperature to 400 C.

  • 60 x 80 CM

Slightly larger than the first, this model can house about four pizzas at a time. The larger hearth size requires 5 kg of wood to reach higher temperatures.

  • 100 x 80 CM

As the largest option, this particular model can cook five pizzas at one time! To accommodate this size, you’re going to need at least 8 kg of wood to reach 400 C.

Where Can I Use This Oven?

Clementi’s Pulcinella is intended for outdoor spaces. The intense heat level and smoke output is not the best match for inside a house or home. Luckily, as I said earlier, the Pulcinella’s stand has two wheels, which allows for easy movement around your outdoor space.

What Makes This Oven Special?

In my opinion, what sets this oven apart from the rest is the interior design. Clementi truly took the time and energy to deliver a thoughtful and well-crafted product. The hearth’s lower bricks retain optimal heat to create the crispiest pizza crust. The oven maintains its heat through a combination of the retentive bricks, Clementi’s Air Plus System, and high-grade insulation.

This insulation is composed of 11 centimetres wool rock and 2.5-centimetre ceramic fibre. It is through this marriage of material that the Pulcinella creates highly retentive heats. In simpler terms, it means you can accurately control the internal heat for long periods of time. This opens up the ability for a slower and more continuous cook.

Our Verdict

The Pulcinella truly sets itself apart through its ability to marry the techniques of the past with the modernisation of the future. Its emphasis on insulation, ingenuity, and versatility make it a great purchase for any pizza lover.

Although this is one of the pricier models, you definitely get what you pay for. It’s stylish, effective, and definitely user-friendly. So, if you are a fan of a classic Neapolitan style pizza, I cannot recommend this brand enough.
